I know the importance of a sugar free lifestyle. But sometimes a girl really needs some chocolate! So I played around with a few ingredients intending to make cookies. However, since I didn’t have eggs I substituted yogurt and made truffles instead. They turned out great so I had to share.
The Bio Trust Protein Powder is a very high quality protein powder that we ordered online. It is not cheap, but we decided that we were going to go for quality and I am glad we did. I also included pure unrefined coconut oil in the recipe but forgot to include it in the ingredient photo above.
Sugarless Chocolate Protein Truffles
- 2 scoops chocolate protein powder
- 2 T. cocoa powder
- 5 packets Truvia
- 1/3+ c. Fage Greek yogurt
- 1/4 c. 100% peanut or almond butter (I used chunky, but smooth would work too)
- 2 T. melted pure unrefined coconut oil
Combine dry ingredients then add the yogurt, peanut butter, and coconut oil. The dough should be thick. Rub your hands with a little coconut oil to prevent dough from sticking, then roll dough into 1 inch balls. Roll the truffles in cocoa powder and refrigerate. Makes about 15-18 truffles.
*This is not an exact recipe. I almost never measure anything. So if your dough is too sticky add more protein powder. If it is too dry add more yogurt or coconut oil. Stir until your consistency is “just right “(like baby bear’s porridge in The Three Bears)!
