We have been seeing a lot of fresh peaches in the grocery store lately. Since everyone loves peaches, we have been buying a lot of peaches too. Then Summer learned that August was National peach month and August 24 was National peach pie day. And so she reminded me on several occasions, that a fresh peach pie would be really good.
This pie is unbaked (except the crust), so it tastes like you are biting into fresh delicious peaches, because you are.
I bought a frozen pie crust since we are traveling and are not set up to make a homemade crust.
FRESH PEACH PIE
- 1 baked pie crust, 9 inch
- 7-8 peaches
- 3/4 c. sugar
- 1/4 c. cornstarch
- 3 T. lemon juice
- 1/2 t. cinnamon
- 1/8 t. ground nutmeg
To make the glaze: put sugar, cornstarch, cinnamon, and nutmeg in a saucepan. Stir to combine. Blend 4 peeled peaches with the lemon juice until pureed. Whisk the peach puree with the sugar mixture and cook over medium heat until it becomes a nice thick glaze, for about 5 minutes. Allow the glaze to cool for 10-15 minutes. If you put it in the pie crust too warm, it can make the crust soggy. Also, make sure the crust is cool before putting in the glaze. Then layer like a lasagne. First glaze, then sliced peaches, glaze…..I usually do 4 layers of glaze and 3 layers of sliced peaches.
Chill the pie for a couple of hours before serving.

Summer was so excited to get the pie, that she finished her piece before Dave even took his first bite. And Luie was excited too, as you can see! I asked for a quote from each of them. Dave said, “Delicious!” Summer said, “Really good!” Luie said, “That pie is soooo good! Can I have another piece?”
